Place an egg white in a shaking glass and do a dry shake (no ice)

Add the Mezcal, Plum Wine, Lemon Juice, and Matcha infused simple syrup to the egg white and shake again

Drop in some ice and shake a third time

Using a stencil, spray bitters over the foam
